Ingredient List
|
2 lbs
potatoes peeled, cut into ½ inch pieces
|
|
|
1 lb chicken dark and white meat, about four pieces
|
|
1 tbs of your favorite seasoning rub (garlic powder, oregano, cumin, salt and pepper)
|
juice of two limes and their zests
|
|
2 tbs vegetable oil
|
1 tsp turmeric
|
|
|
a few dashes of hot sauce*
|
|
½ cup mayonaise
|
1/3 cup finely chopped parsley*
|
|
2 stalks finely chopped celery
|
|
|
Additional Ingredients
|
|
|
small black olives (pitted) as needed
|
|

Recipe Instructions

Add potatoes to the Crock-pot and pour water over them. Yukon Gold potatoes are more traditional here, but any potato will do. Rub Crock-Pot Savory Herb Chicken seasoning into chicken piece. Place chicken pieces skin-side up over potatoes. Cook on low for 3-4 hours low, potatoes should be cooked through.Remove chicken and set aside to cool. With a slotted spoon, remove potatoes and mash in a mixing bowl. Whisk turmeric, cayenne pepper*, hot sauce*, lime juice, zest and oil. These potatoes are traditionally spicy, so if you’re concerned with heat, halve this amount and do a taste test. Stir into mashed potatoes mixing completely. Potatoes will turn a deep yellow color have the consistency of very thick mashed potatoes, set aside.After chicken has cooled, remove chicken from the bone and shred meat into a bowl. Mix in mayonnaise, parsley, celery, and chicken. Season to taste. Grease a 12-cup muffin pan. Start by pressing a spoonful of the potato mixture into the base of each muffin vessel. Next add a layer of the chicken mixture and then a final layer of the potato mixture. Press down lightly on the final layer and cover with plastic wrap, refrigerate. Once the causa are cooled, run a butter knife around each causa and gently remove. Place the causa small-side up and decorate with black olives. Bats are made by cutting olive rings and slicing in half. The aliens are made by halving olives. Gently press the olives into the causa These are sure to be hit, this makes 12 servings. |
This is definitely a new one for me, and very interesting! I think it’s one of those recipes that you have to try. The addition of lemon juice & zest is really intriguing. I will absolutely give this a try, soon! 🙂
